Sauvignon Blanc. Like the Sémillon, they had to pick this early before the rain in 2021. Vines grow on a rocky outcrop at 233 m on a south-east-facing slope. The grapes were cooled overnight. The next morning 75% of the grapes were pressed as whole bunches. The juice underwent spontaneous fermentation in old French oak. 25% of the grapes were destemmed and fermented in open-top fermenters on the skins, pressed after 2 weeks to old French oak barrels. 10 months on the lees, blended and bottled. Named JCB because during the first harvest, his trailer got stuck on a river bed and was pulled out by a JCB.
“Subtle green-fruited varietal character plus a light note of dried grasses. Very high acidity that demands food. The texture is not very tannic but it does help balance this early-picked freshness. Deep, gently chewy. If you are OK with high acid, you will love this textural wine.”
